Seahorse Grill
The cassava pie is a lovely example of a Bermuda classic, a savoury recipe and national dish for over 300 years, made of eggs, chicken, pork, sugar, nutmeg, mace and more. The same goes for codfish and bananas, served in variations with avocado, creamed codfish and codfish cakes. The classic English sweet potato pudding, along with Syllabub — layers of guava jelly, thick cream and sherry — are typical desserts.
Onion is a staple ingredient of this island and figures in many recipes, including onion casserole, onion biscuit bread, onion soup that includes bacon, onion pie and onion soufflé. Black-eyed peas are cooked with onions, salt pork and sometimes rice. Dumplings or boiled sweet potatoes may also be added to the mix at the last minute. Another peas-and-rice dish, Hoppin' John, is eaten as a main dish or as a side dish with meat or poultry.
Bermuda is well known for its seafood, and it's been said that fresh fish brings out the best of this island's cuisine, served at local high-end restaurants such as Blu, Beau Rivage, Ocean Echo, The Lobster Pot and the Barracuda Grill. One favourite is the Bermudian wahoo, a sweet fish that tastes like albacore and is superb as steak.
Aqua
Another specialty is the robust tomato-based spicy fish chowder, with its prodigious list of ingredients. Most recipes call for a long-simmered base of fish stock, fish fillets, a potpourri of vegetables such as onions, celery, green peppers, carrots, potatoes, turnips, tomatoes and garlic, ketchup or tomato puree and a handful of seasonings such as thyme, bay leaves, cloves, marjoram, curry powder, cinnamon, salt and pepper.

Hog Penny is Hamilton's oldest licensed establishment, having been in business since 1957, and is interestingly the original inspiration for the Cheers pub in Boston. Portofino/Peter Matcham
Portofino is not the largest Italian restaurant in Bermuda, but it is certainly the most popular. Situated on Bermudian Road, Portofino is one of the most famous international tourist destinations. When Portofino opened some 25 years ago, the owner, Cesare Maranzana, set out to impress his wife by re-creating the beauty of his native town.
